• 2 tbsp (30g) Butter
• 1 medium Onion, diced
• 1 medium Carrot, sliced
• 2 Celery Stalks, diced
• 3 cups (720ml) Fish Broth
• 1 cup chopped Broccoli Florets
• 1 cup chopped Cauliflower Florets
• 1 cup chopped Kale, stems removed
• 1 Bay Leaf
• 1 pound (450g) White Fish Fillets, cut into 2-inch chunks
• 1 cup (240ml) Heavy Cream
• Salt and freshly ground Black Pepper, to taste

Instructions

1. Set your Instant Pot to the SAUTE function. Once hot, melt the butter.
2. Add the diced onion and cook for 3 minutes, stirring occasionally, until it begins to soften.
3. Press CANCEL. Stir in the carrot, celery, fish broth, broccoli, cauliflower, kale, bay leaf, and white fish fillets. Season generously with salt and pepper.
4. Secure the lid, ensuring the steam release valve is in the ‘Sealing’ position. Select PRESSURE COOK (or MANUAL) and set to HIGH for 5 minutes.
5. Once the cooking cycle is complete, allow the pressure to release naturally for 10 minutes, then carefully switch the valve to ‘Venting’ to release any remaining steam.
6. Carefully remove the lid. Stir in the heavy cream until the stew is smooth and creamy.
7. Remove and discard the bay leaf before serving. Adjust seasoning with more salt and pepper if desired.
