Ingredients

• 3 tbsp. olive oil
• 4 garlic cloves, finely chopped
• 1 pound / 450g white mushrooms, sliced
• 1 chipotle chile in adobo sauce, finely chopped
• ¼ tsp dried oregano
• ¼ tsp ground cumin
• ¼ tsp smoked paprika
• Salt, to taste
• 1 tbsp. apple cider vinegar
• 1 tbsp. fresh lime juice

Instructions

1. Directions1. Set your Instant Pot to the “Sauté” function. Once the display reads “Hot,” add the olive oil, sliced mushrooms, and chopped garlic. Cook for 2-3 minutes, stirring occasionally, until the garlic is fragrant.2. Press “Cancel” to stop the sauté function. Stir in the chopped chipotle chile, oregano, cumin, smoked paprika, salt, apple cider vinegar, and lime juice, scraping up any bits from the bottom of the pot.3. Secure the lid and turn the pressure valve to the “Sealing” position.4. Select “Manual” or “Pressure Cook” and set the timer to 2 minutes at High Pressure.5. Once the cooking cycle is complete, carefully perform a Quick Release by moving the pressure valve to the “Venting” position.6. Once the float valve drops, remove the lid. Stir well and serve warm.
