Using avocados is one of my favorite ways to develop a rich, creamy texture without adding dairy to a recipe. With their mild taste and buttery texture, they bring a silkiness to whatever you add them to—not to mention the added benefit of healthy fats. The sesame oil in this recipe imparts a toasted nuttiness to the flavor. However, it is not required; you can omit it for a lighter, more citrusy vibe.
INGREDIENTS
•1 medium-sized ripe avocado, peeled and pitted
•3 cloves garlic, minced
•¾ cup avocado oil
•¼ cup white vinegar
•1 tablespoon plus 2 teaspoons fresh lemon juice
•1 tablespoon Dijon mustard
•1 teaspoon toasted sesame oil (optional)
•1 teaspoon sea salt
•¼ teaspoon ground black pepper
•¼ teaspoon ground cumin
DIRECTIONS
Put all the ingredients in a food processor or blender and pulse until smooth and creamy. Store in the refrigerator for up to a week.
