Ginger Tilapia Fillets

(Total Time: 40 MIN| Serves: 2)

Ingredients:
1 lb tilapia fillets, chopped
¼ cup celery leaves, finely chopped
1 spring onion, finely chopped
2 tbsp peanut oil
3 tbsp soy sauce
1 tbsp rice vinegar
1 cup fish stock

Spices:
1 tbsp fresh ginger, grated
1 tsp garlic powder
1 tsp sea salt

Directions:

  1. In a small bowl, whisk together peanut oil, soy sauce, rice vinegar, ginger, garlic powder, and sea salt. Rub the fish with this mixture and place in a large Ziploc bag. Seal the bag and refrigerate for at least 30 minutes.
  2. Plug in the instant pot and pour in the stock. Remove the fish from the refrigerator and place in the pot along with the marinade. Sprinkle with celery and seal the lid.
  3. Set the steam release handle to the ‘’Sealing’’ position and press the ‘’Manual’’ button. Set the timer for 6 minutes on high pressure.
