• 3 tablespoons finely chopped fresh mint leaves
• ½ teaspoon finely ground sea salt
• 6 cups / 425 g broccoli florets
• 3 medium tomatoes, diced
• 1 cucumber, seeded and diced
• 1 bunch fresh parsley, finely chopped

Instructions

1. Marinate the chicken: In a large dish, combine the chicken thighs, avocado oil, lemon juice, garlic, rosemary, thyme, and oregano. Turn the thighs to coat them completely. Cover and refrigerate for at least 4 hours, or overnight for best results.
