Ingredients

• 3 tablespoons / 45 ml olive oil
• 5 chicken sausage links (about 12 oz / 340g), sliced
• 2 cloves garlic, minced
• 1 small red onion, cut into large chunks
• 1 small zucchini (about 6 oz / 170g), halved and sliced
• 1 small yellow squash (about 6 oz / 170g), halved and sliced
• 1 small red bell pepper, cut into large chunks
• 1 small yellow bell pepper, cut into large chunks
• 6 cremini mushrooms (about 4 oz / 115g), quartered
• ½ teaspoon / 2.5 g Italian seasoning
• ½ teaspoon / 1 g red pepper flakes
• Sea salt and ground black pepper, to taste
