We’re combining the lean protein power of both chicken and turkey with earthy button mushrooms for a stew that’s both incredibly satisfying and surprisingly easy to make. Thanks to the magic of the Instant Pot, this hearty meal comes together in under an hour, making it a perfect solution for busy weeknights. Ingredients

• 1 lb / 450g boneless, skinless turkey breast, chopped into bite-sized pieces
• 1 lb / 450g boneless, skinless chicken breast, chopped into bite-sized pieces
• 12 oz / 340g button mushrooms, sliced
• 2 tbsp / 28g butter, softened
• 1 tbsp / 15ml olive oil
• 1 bunch celery leaves, finely chopped
• Spices
• 1 tsp salt
• ½ tsp freshly ground black pepper
• 1 tbsp cayenne pepper, adjust to taste

3. Press “Cancel.” Add 2 cups of water and stir, scraping any browned bits from the bottom of the pot. Secure the lid, set the steam release handle to “Sealing,” and press the “Meat/Stew” button. Cook for 13 minutes.
4. Once the timer finishes, perform a quick release by carefully moving the steam release handle to “Venting.”
5. After the pin drops, open the lid. Stir in the chopped chicken breast, softened butter, and one additional cup of water. Set the Instant Pot back to “Sauté” and bring to a simmer.
6. Continue to simmer for 15 minutes, stirring occasionally, until the chicken is fully cooked and tender.
7. Add the sliced mushrooms and finely chopped celery leaves. Cook for another 8-10 minutes, until the mushrooms have softened to your liking.
8. Taste and adjust seasoning if necessary. Serve warm.
