• 2 lbs / 900g ox heart, trimmed of fat and sinew, cut into 1-inch cubes
• 2 tbsp olive oil
• 1 large yellow onion, chopped
• 3 cloves garlic, minced

• 2 cups / 480ml beef broth
• 1 tbsp Herbes de Provence
