March 29, 2026

Craving comfort food that’s both incredibly delicious and ridiculously easy to make? Look no further! These Instant Pot Tomato Ribs are your answer. We’re talking fall-off-the-bone tender pork, bathed in a rich and savory sauce bursting with the bright flavor of cherry tomatoes and the intense sweetness of sun-dried tomatoes. The Instant Pot does all the heavy lifting, pressure cooking the ribs to perfection in just 20 minutes, while a quick sauté develops a luscious, aromatic sauce. It’s a perfect, low-carb weeknight dinner that tastes like you spent hours in the kitchen!

Ingredients

• (Total Time: 45 MIN| Serves: 6)
• 2 lbs / 900g pork ribs, chopped into individual pieces
• 4 cups / 950ml beef broth
• 4 tbsp / 60g butter
• 1 large onion, finely chopped
• 2 cups / 300g cherry tomatoes, whole
• 1 cup / 55g sun-dried tomatoes
• Spices
• 3 tbsp stevia or swerve
• 1 tsp / 6g sea salt
• 1 tsp / 1g dried thyme
• ½ tsp / 0.5g dried oregano
• ½ tsp / 1.5g garlic powder

Instructions

1. Directions
2. Place the chopped pork ribs into the Instant Pot insert and pour in all 4 cups of the beef broth. Secure the lid, set the steam release handle to the ‘Sealing’ position, and select the ‘Manual’ or ‘Pressure Cook’ button.
3. Set the timer for 20 minutes on high pressure.
4. Once the cooking cycle is complete, allow the pressure to release naturally for 10 minutes, then carefully perform a quick release for any remaining steam. Open the lid.
5. Using tongs, remove the tender ribs from the pot and set them aside. Carefully pour the broth into a separate bowl or container. Select the ‘Sauté’ function on the Instant Pot.
6. Add the butter to the inner pot. Once melted, add the finely chopped onion and a pinch of salt. Cook for 3-4 minutes, stirring until the onion is soft and translucent.
7. Add the whole cherry tomatoes and sun-dried tomatoes to the pot. Pour in 2 cups of the reserved beef broth and stir in the stevia (or swerve), remaining sea salt, dried thyme, dried oregano, and garlic powder.
8. Continue to cook on ‘Sauté’ mode, stirring occasionally, for 5-7 minutes until the cherry tomatoes have softened and started to burst, creating a rich sauce.
9. Press the ‘Cancel’ button to turn off the heat. Return the cooked ribs to the pot, gently tossing to coat them completely in the savory tomato sauce.
10. Cover the pot with the lid (no need to seal) and let the ribs rest in the warm sauce for 10 minutes to allow the flavors to meld together before serving.

Pro Tips

• For an extra layer of flavor, use the ‘Sauté’ function to brown the ribs in a little oil on all sides before pressure cooking. Remove them, deglaze the pot with a splash of broth, then proceed with the recipe.
• If you prefer a thicker sauce, create a slurry by mixing 1 teaspoon of xanthan gum with 1 tablespoon of cold water. Whisk it into the sauce on ‘Sauté’ mode until it reaches your desired consistency.
• For a deeper, more concentrated tomato flavor, use sun-dried tomatoes packed in oil. Just be sure to drain them well before adding them to the pot.
• These ribs are fantastic served over cauliflower rice, zucchini noodles, or with a side of steamed green beans to keep the meal low-carb and satisfying.
