Ingredients

• Total Time: 25 MIN | Serves: 2
• 2 tbsp / 30ml coconut oil, melted
• 1 cup / 240ml unsweetened almond milk
• 2 large eggs
• 1/3 cup / 45g hemp seeds
• 1 tbsp / 10g almonds, chopped
• 1/3 cup / 80g pumpkin puree
• 2 tbsp / 20g sesame seeds
• Spices
• 2 tbsp / 24g Swerve or other erythritol-based sweetener
• 2 tsp ground cinnamon

Instructions

1. Prepare your pan by lining a small, Instant Pot-safe baking dish (a 6-inch round pan or small loaf pan works well) with parchment paper and set it aside.2. In a mixing bowl, whisk together the melted coconut oil, Swerve, and cinnamon until combined. Add the almond milk, eggs, hemp seeds, chopped almonds, pumpkin puree, and sesame seeds. Stir thoroughly until you have a smooth, consistent batter.3. Pour the batter into your prepared baking dish. Cover the dish loosely with a piece of aluminum foil to prevent condensation from dripping onto the bars.4. Pour 1 cup of water into the inner pot of your Instant Pot and place the trivet inside. Carefully lower the baking dish onto the trivet.5. Secure the Instant Pot lid and turn the steam release handle to the ‘Sealing’ position. Select the ‘Manual’ or ‘Pressure Cook’ setting and cook on high pressure for 15 minutes.6. Once the cooking cycle is complete, perform a quick pressure release by carefully moving the steam release handle to the ‘Venting’ position.7. Once the pin has dropped, open the lid and carefully lift the dish out using the trivet handles. Remove the foil and let the bars cool in the dish for at least 10 minutes before chilling further in the refrigerator.8. Once fully chilled and firm, lift the bars out using the parchment paper, cut into 4 bars, and serve.
