• 5 large eggs
• 10 oz / 280g spinach, chopped
• ½ cup / 115g cottage cheese
• ½ cup / 75g feta cheese, crumbled
• ¼ cup / 35g red bell pepper, finely diced
• 2 cherry tomatoes, halved
• 1 cup / 100g chopped cauliflower florets
• 5 tbsp / 70g butter
• ½ tsp / 3g salt
• ¼ tsp / 1g freshly ground black pepper
• ¼ tsp / 0.5g dried oregano
• ½ cup / 15g fresh celery leaves, for garnish

Instructions
