• 1 cup / 200g Dried Black Soybeans, soaked overnight and drained
• 1 cup / 150g Onion, diced
• 1 cup / 120g Celery Stalks, diced
• 4 cloves Garlic, minced
• 1 tsp Dried Oregano
• 1 tsp Salt
• 1 tsp Cajun Seasoning
• 1 tsp Liquid Smoke
• 2 tsp Tony Chachere’s All Purpose Seasoning
• 1 tsp Louisiana Hot Sauce
• 2 Ham Hocks
• 2 cups / 280g Ham, diced
• 2 cups / 475ml Water

3. Pressure Cook: Secure and lock the lid. Turn the steam release valve to the “Sealing” position. Select the “Manual” or “Pressure Cook” setting and cook at high pressure for 30 minutes.
4. Natural Release: Once the cooking cycle is complete, allow the pressure to release naturally for 10 minutes. This step is crucial for tenderizing the meat.
5. Quick Release: After 10 minutes, carefully move the steam release valve to the “Venting” position to release any remaining pressure.
6. Shred and Serve: Once the pin has dropped, carefully open the lid. Remove the ham hocks and place them on a cutting board. Shred the meat from the bones, discarding the bones and any excess fat. Return the shredded meat to the pot, stir to combine, and serve hot.
