• 4 Sausage Links, cooked and sliced
• 4 large Eggs
• ¼ cup / 40g chopped Tomato
• 1 Jalapeno, diced
• 1 Avocado, sliced
• Salt and Pepper, to taste

2. Place the cauliflower rice in a microwave-safe bowl and microwave on high for 5 minutes to steam. Let it cool for a few minutes until safe to handle.2. Transfer the cooled cauliflower to a clean kitchen towel or cheesecloth and squeeze out as much liquid as possible. This step is crucial for a firm crust.3. In a medium bowl, combine the dried cauliflower, mozzarella, beaten egg, salt, and pepper. Mix thoroughly until it forms a sticky ‘dough’.4.
