• 2 lbs / 900g ox heart, trimmed and cut into 1-inch cubes
• 1 tbsp olive oil
• 1 large onion, chopped
• 6 medium carrots, peeled and chopped into 1-inch pieces
• 3 cloves garlic, minced
• 1 cup / 240ml dry red wine, such as Cabernet Sauvignon or Merlot
• 2 cups / 480ml beef broth
• 1 tbsp herbs de Provence
• Salt and freshly ground black pepper, to taste
