Ingredients

• 2 large tomatoes, roughly chopped (about 450g)
• 1 cup / 240ml tomato sauce, sugar-free
• 2 onions, chopped
• 2 garlic cloves, crushed
• 2 tbsp / 30ml tomato paste
• 3 tbsp / 45ml olive oil
• Spices
• 2 tsp stevia powder
• ½ tsp dried thyme
• 1 tsp salt

Instructions

2. Heat the olive oil in a large pot or multi-cooker on the ‘Sauté’ setting over medium heat. Add the chopped onions and crushed garlic, and cook for 3-4 minutes until softened and fragrant.
3. Add the chopped tomatoes, stevia, salt, and dried thyme. Pour in ¼ cup of water and simmer, stirring occasionally, until the tomatoes have softened and most of the liquid has evaporated.
4. Stir in the tomato paste until it is fully incorporated. Pour in the sugar-free tomato sauce and mix everything together well.
5. Continue to cook for another 2-3 minutes to allow the flavors to meld. Taste and adjust seasoning if desired before serving.
