• ½ cup / 64g coconut flour
• 3 tablespoons / 36g granular erythritol
• 1 teaspoon / 2.6g ground cinnamon
• 1 teaspoon / 4g baking powder
• ½ teaspoon / 3g sea salt
• 5 large eggs, at room temperature
• 1 cup / 240ml unsweetened almond or coconut milk
• ¼ cup / 60ml coconut oil, melted but not hot
• 1½ teaspoons / 7.5ml maple extract
• 1 teaspoon / 5ml pure vanilla extract
• Avocado oil or coconut oil, for greasing the pan
