    Mackerel Salad

    (Total Time: 25 MIN| Serves: 6)

    Ingredients:
    2 cups chopped Lettuce
    8 ounces Mackerel
    1 cup Fish Stock
    ¼ tsp Salt
    ¼ tsp Pepper
    1 Large Cucumber, sliced
    1 ½ cups chopped Tomatoes
    1 Red Onion, sliced
    1 Garlic Clove, minced
    1 tsp Oregano
    1 tbsp. Olive Oil
    1 tbsp. Lemon Juice

    Directions:

    1. Season the mackerel with salt and pepper and place it in the IP in the steamer basket.
    2. Pour the stock into the IP and lower the basket.
    3. Close the lid and cook on HIGH for 5 minutes.
    4. Do a quick pressure release.
    5. Chop and let cool.
    6. Combine all of the veggies in a large bowl and top with the mackerel pieces.
    7. Drizzle with olive oil and lemon juice.
    8. Serve and enjoy!
