Mackerel Salad
(Total Time: 25 MIN| Serves: 6)
Ingredients:
2 cups chopped Lettuce
8 ounces Mackerel
1 cup Fish Stock
¼ tsp Salt
¼ tsp Pepper
1 Large Cucumber, sliced
1 ½ cups chopped Tomatoes
1 Red Onion, sliced
1 Garlic Clove, minced
1 tsp Oregano
1 tbsp. Olive Oil
1 tbsp. Lemon Juice
Directions:
- Season the mackerel with salt and pepper and place it in the IP in the steamer basket.
- Pour the stock into the IP and lower the basket.
- Close the lid and cook on HIGH for 5 minutes.
- Do a quick pressure release.
- Chop and let cool.
- Combine all of the veggies in a large bowl and top with the mackerel pieces.
- Drizzle with olive oil and lemon juice.
- Serve and enjoy!
