    Healthy diet to lose weight

    Shrimp and Tomato Casserole

    (Total Time: 30 MIN| Serves: 4)

    Ingredients:
    1 ½ pounds Shrimp, peeled and deveined
    1 ½ pounds Tomatoes, chopped
    2 tbsp. Olive Oil
    ½ cup Veggie Broth
    ¼ cup chopped Cilantro
    2 tbsp. Lime Juice
    1 Jalapeno, diced
    1 Onion, diced
    1 cup shredded Cheddar Cheese
    1 tsp minced Garlic

    Directions:

    1. Heat the olive oil in your Instant Pot on SAUTE.
    2. Add onion and cook for 3 minutes.
    3. Add garlic and sauté for additional30-60 seconds.
    4. Stir in the broth, cilantro, and tomatoes.
    5. Close the lid and cook on HIGH for 9 minutes.
    6. Do a natural pressure release.
    7. Add shrimp and cook on HIGH for 2 more minutes.
    8. Release the pressure quickly and stir in cheddar,
