Southern Collard Greens

Ingredients:

2 bunches collard greens

2 tbsp. olive oil

1 cut into thin rings small yellow onion

3 minced garlic cloves

Pinch of red pepper flakes

1 cup water

Salt, to taste

Directions:

Remove the tough stems of collard greens and then, cut into thin strands.
Place the oil in the Instant Pot and select “Sauté”. Then add the onion and cook for about 4-5 minutes.
Add the garlic and red pepper flakes and cook for about 1 minute.
Select the “Cancel” and stir in collard greens and water.
Secure the lid and place the pressure valve to “Seal” position.
Select “Manual” and cook under “High Pressure” for about 3 minutes.
Select the “Cancel” and carefully do a Quick release.
Remove the lid and stir in salt.
Serve hot.
