Ingredients:
• 3 ounces cottage cheese
• 2 eggs
• ½ tablespoon psyllium husk powder, ground
• ½ cup whipped cream
• 1 oz. butter
Directions:
1. Mix all ingredients except whipped cream and keep aside. Heat butter in the frying pan and pour half of the mixture. Cook it on each side and dish out in a serving platter.
2. Add whipped cream in another bowl and whisk until smooth. Top the pancakes with whipped cream on them.
3. Meal Prep Tip: These keto pancakes can also be used as a snack. They taste awesome when serve cold.
