Ingredients:
• 4 tablespoons instant coffee
• 2 tablespoons cocoa powder
• ½ cup chia seeds
• ½ cup coconut cream
• 1 tablespoon vanilla extract
• 2 tablespoons sugar substitute
• 4 tablespoons cacao nibs
• 2 cups water
Directions:
1. Prepare a strong cup of coffee by simmering the instant coffee with 2 cups of water until the liquid is about 1 cup. Whisk the cocoa powder, coconut cream, vanilla extract, and sugar substitute into the coffee.
2. Mix in the chia seeds and cacao nibs. Mix well. Divide into 4 small serving dishes and allow to set for at least 30 minutes. Remove from refrigerator, garnish with a few additional cacao nibs, and serve!
