Ingredients:
• 2 medium salmon fillets
• 1 bunch broccolini
• 1 tbsp. extra virgin olive oil
• 2 tsp. whole-grain mustard
• 4 tbsp. Paleo mayonnaise
• 2 tsp. Dijon mustard
• Salt, to taste
• Black pepper, to taste
• Lemon wedges, to serve
Directions:
1. Preheat the oven to 200°C. Lay the broccolini on a cutting board and trim off the inedible parts — place in a baking tray and drizzle with olive oil. Pat the salmon fillets, and sprinkle the top with Dijon and whole-grain mustard.
2. Lay the salmon and lemon wedges with broccolini in the tray — season with salt and pepper. Bake for about 10 minutes until salmon is evenly-cooked, and broccolini turns tender-crisp. Serve instantly with mayonnaise or store in the refrigerator for one day.
