Ingredients:
• 4 (6-ounce) boneless salmon fillets
• 1 tablespoon olive oil
• Salt and pepper
• 1 large zucchini, sliced in coins
• 2 tablespoons fresh lemon juice
• ½ cup chopped mango
• ¼ cup fresh chopped cilantro
• 1 teaspoon lemon zest
• ½ cup canned coconut milk
Directions:
1. Preheat a grill pan to heat, and sprinkle with cooking spray liberally. Brush with olive oil to the salmon and season with salt and pepper.
2. Apply lemon juice to the zucchini, and season with salt and pepper. Put the zucchini and salmon fillets on the grill pan.
3. Cook for 5 minutes then turn all over and cook for another 5 minutes. Combine the remaining ingredients in a blender and combine to create a sauce. Serve the side-drizzled salmon filets with mango sauce and zucchini.
