Ingredients

• 2 lbs / 900g wild Alaskan cod fillets, cut into 4 portions
• 1 cup / 200g cherry tomatoes
• 2 garlic cloves, crushed
• 2 tbsp / 28g butter, for finishing (optional)
• 3 tbsp / 45ml olive oil
• 1 tsp / 6g salt
• ½ tsp / 1g black pepper, freshly ground
• ½ tsp / 1g rosemary powder
• ½ tsp / 1g dried thyme

2. First, prepare the fish. Gently rinse the cod fillets under cold water and pat them completely dry with a paper towel.
3. In a mixing bowl, create the topping by combining the cherry tomatoes, crushed garlic, salt, pepper, rosemary powder, and dried thyme. Stir everything together until well combined.
4. Prepare your pressure cooker. Pour two cups of water into the inner pot of the Instant Pot and place a trivet on the bottom.
5. Line a round 7-inch baking dish with parchment paper. Arrange the cod fillets in a single layer inside the dish and brush them generously with olive oil. Spoon the seasoned tomato mixture evenly over the top of the fillets.
6. Carefully place the baking dish onto the trivet inside the Instant Pot. Secure the lid, turn the steam release handle to the ‘Sealing’ position, and select the ‘Manual’ or ‘Pressure Cook’ button. Set the timer for 5 minutes on high pressure.
7. Once the cooking cycle is complete, press ‘Cancel’ and perform a quick release by carefully turning the steam release handle to the ‘Venting’ position.
8. Once the pin drops, open the lid and cautiously remove the baking dish. Let it rest for a minute, then serve warm, garnished with fresh herbs if desired.
