Ingredients

• 1 lb / 450g Ground Pork
• ¼ cup / 25g Spring Onions, finely chopped
• ¼ cup / 15g Fresh Coriander (Cilantro), chopped
• 2 tsp / 10ml Soy Sauce
• 1 tsp / 5ml Oyster Sauce
• 1 tsp / 2g Ground Black Pepper
• ½ tsp / 3g Salt
• 1 tbsp / 15g Fresh Ginger, minced
• 1 tbsp / 15g Fresh Garlic, minced
• 2 large Eggs, lightly beaten
• 2 cups / 475ml Water, for the Instant Pot

Instructions

1. Directions
2. In a large mixing bowl, combine the ground pork, chopped spring onions, coriander, soy sauce, oyster sauce, black pepper, salt, minced ginger, and eggs. Mix gently with your hands or a spatula until all are just combined. Avoid overmixing to keep the meatballs tender.2. Take an oven-safe silicone mold with twelve 2.5-ounce cavities (an egg bite or baby food mold works perfectly). Fill each cavity about three-quarters full with the pork mixture.3. Pour two cups of water into the inner pot of your Instant Pot. Place the steamer rack inside, then carefully set the filled silicone mold on top of the rack.4. Secure and lock the lid, ensuring the steam release valve is in the ‘Sealing’ position. Select the ‘Steam’ function and set the cooking time to 10 minutes.5. Once the cooking cycle is complete, allow the pressure to release naturally for 5 minutes. Then, carefully perform a quick release by moving the valve to the ‘Venting’ position to release any remaining steam.6. Using oven mitts, carefully remove the mold from the Instant Pot. Let the wonton meatballs cool for a minute before gently removing them from the cavities. Serve warm with your favorite soy or chili dipping sauce.

FAQ

Q: Can I make this recipe without a silicone mold
A: This recipe is specifically designed for steaming in a silicone mold to achieve the perfect tender texture. An egg bite or baby food mold works best. You could try forming meatballs and placing them on a parchment-lined steamer rack, but the cooking time and texture may vary.

Q: What other ground meats can I use
A: Yes, you can easily substitute the ground pork. Ground chicken or ground turkey are excellent alternatives for a leaner meatball with a slightly different flavor profile.

Q: Are these wonton meatballs keto-friendly
A: Absolutely! With only 2g of net carbs per serving, these wonton meatballs are a perfect low-carb and keto-friendly meal or appetizer. Be sure to serve them with a sugar-free dipping sauce to keep them keto.

Q: How do I store and reheat leftover wonton meatballs
A: Store leftovers in an airtight container in the refrigerator for up to 4 days. They can be enjoyed cold or reheated gently in the microwave or by steaming them for a few minutes until warmed through.
