• For the Cookies
• 3 ounces / 85g buttery spread, softened
• 2 tbsp / 24g erythritol or preferred granular sweetener
• 1 tbsp / 15 ml almond extract
• 6 tbsp / 45g coconut flour
• 2 tbsp / 30g cream cheese, softened
• For the Filling
• ¼ cup / 60g sugar-free raspberry jam
• Optional: Powdered erythritol for dusting

Instructions

1. Preheat your oven to 350°F / 175°C and line a baking sheet with parchment paper.
2. In a medium bowl, use an electric mixer to beat the softened buttery spread, cream cheese, erythritol, and almond extract until light and fluffy.
3. Gradually add the coconut flour and mix on low speed until a cohesive dough forms. Knead it gently with your hands for a minute to bring it all together.
4. Place the dough between two sheets of parchment paper and roll it out to a thickness of about 1/4 inch / 5 mm.
5. Using a 2-inch round cookie cutter, cut out 20 circles. On 10 of these circles, use a smaller cookie cutter to cut out a “window” in the center. These will be your top pieces.
6. Carefully transfer all the cookies to the prepared baking sheet. Bake for 10-12 minutes, or until the edges are lightly golden. Watch them closely as coconut flour bakes quickly.
7. Remove from the oven and let the cookies cool completely on the baking sheet for at least 30 minutes. They are very delicate when warm but will firm up as they cool.
8. Once cooled, spread about 1 teaspoon of sugar-free raspberry jam on the flat side of each bottom cookie (the solid circles).
