I was determined to recreate that magic at home, and this Lemony Artichoke Cauliflower Risotto is the delicious result! Ingredients

• 2 tablespoons avocado oil or olive oil
• ½ cup small onion, diced
• 5 cloves garlic, minced

• 6 cups riced cauliflower
