Ingredients

• 1 lb / 450g trout fillet, chopped
• ¼ cup / 60 ml fish stock
• 2 chili peppers, finely chopped
• 3 garlic cloves, crushed
• 3 tbsp / 45g butter
• 2 tbsp / 24g Swerve or other granulated sweetener
• 1 tbsp / 15 ml fish sauce
• 1 tbsp / 15g ginger, freshly grated
• 1 tsp / 5g salt
• 1 tsp / 2g black pepper, freshly ground
• ½ tsp / 1g cumin powder

Instructions

1. Pat the trout fillets dry and generously rub them all over with salt and freshly ground black pepper.
2. In a small bowl, whisk together the fish stock, Swerve, and fish sauce. Stir in the grated ginger and cumin powder until well combined.
3. Place the steamer basket inside your Instant Pot. Arrange the seasoned fish fillets in a single layer inside the basket. Brush the fish generously on all sides with the prepared sauce mixture.
4. Pour 1 cup of water into the bottom of the Instant Pot, being careful not to pour it over the fish. Secure the lid, set the steam release handle to the ‘Sealing’ position, and select ‘Pressure Cook’ (or ‘Manual’) on high for 5 minutes.
5. Once the timer finishes, perform a quick release by carefully moving the steam release handle to the ‘Venting’ position. Once the pin drops, open the lid.
6. While the pressure is releasing, melt the butter in a small skillet over medium heat. Add the crushed garlic and chopped chili peppers, sautéing for 1-2 minutes until fragrant.
7. Carefully remove the steamed trout from the Instant Pot. Drizzle the hot garlic chili butter over the fillets and serve immediately.
