Using the Instant Pot to gently heat them through melds all the flavors together into a warm, satisfying bite. It’s a high-protein, flavor-packed dish that comes together in just 15 minutes!

Ingredients

• 4 large hardboiled eggs, peeled
• 4 large kale leaves
• 4 slices prosciutto, thinly sliced
• ½ tsp fresh thyme leaves, chopped
• ¼ tsp sea salt
• ¼ tsp black pepper, freshly ground
• 1 ½ cups water (355 ml)

Instructions

2. Gently wrap each peeled hardboiled egg with a large kale leaf, tucking the ends to secure it.
3. Carefully wrap a slice of prosciutto around the kale-covered egg. Sprinkle each bundle evenly with salt, pepper, and fresh thyme.
4. Pour the water into the inner pot of your Instant Pot and place the trivet inside.
5. Arrange the prosciutto-wrapped eggs on the trivet, ensuring they are stable. Secure the lid and set the steam release valve to the ‘Sealing’ position.
6. Select the ‘Manual’ or ‘Pressure Cook’ setting and cook on high pressure for 5 minutes. Once the cycle is complete, perform a quick release of the pressure.
7. Carefully remove the eggs from the Instant Pot. Serve immediately while warm and enjoy the infused flavors.
