Easy Instant Pot Bacon Cauliflower Frittata

The Instant Pot does all the heavy lifting, leaving you with a perfectly fluffy frittata and minimal cleanup. Let’s get cooking!

Ingredients

• 8 large eggs
• ½ cup (120 ml) milk
• 1 cup (112 g) shredded mozzarella cheese
• 8 slices bacon, chopped
• 2 cups (200 g) cauliflower, chopped into small florets
• ¼ cup (15 g) green onions, chopped
• ½ tsp salt

Instructions

1. Select the “Sauté” function on your Instant Pot and allow it to heat up. Grease the inner pot lightly with oil.
2. Add the chopped bacon to the hot pot and cook for 2-3 minutes, stirring occasionally, until it’s lightly browned and crispy.
3. Turn off the “Sauté” function. Use a wooden spatula to spread the cooked bacon evenly across the bottom of the pot.
4. Layer the chopped cauliflower florets evenly over the bacon. Set the pot aside for a moment.
5. In a separate medium bowl, whisk the eggs, milk, and salt together until the mixture is light and foamy.
6. Pour the egg mixture evenly over the cauliflower layer in the pot. Sprinkle the shredded mozzarella cheese over the top.
7. Secure the lid on the Instant Pot, ensuring the steam release valve is set to “Sealing.” Select the “Manual” or “Pressure Cook” button and set the timer for 7 minutes on high pressure.
8. Once the cooking cycle is complete, carefully perform a quick pressure release by moving the valve to “Venting.” Once the pin drops, open the lid.
9. Garnish the finished frittata with freshly chopped green onions. Serve warm directly from the pot or slice and plate.
