Ten out of ten times, if I see a Greek salad on a restaurant menu, I will order it. I just love the combination of fresh Mediterranean-inspired ingredients. A couple years ago, I traveled to the beautiful Greek island of Santorini and was surprised to see that a traditional Greek salad does not contain lettuce, and the feta cheese is served in large chunks on top of the salad. It was simply heavenly. Just one bite of this lettuce-based variation whisks me away to the Mediterranean.
ingredients
- 1 large head romaine lettuce, chopped
- 1 mini seedless cucumber, halved lengthwise and sliced into half-moons
- 3 ounces salami, sliced into strips
- 1/3 cup crumbled feta cheese
- 1/3 cup halved cherry tomatoes
- ¼ cup halved and pitted Kalamata olives
- A few thin slices red onion
- Greek Feta Dressing (here), for serving (optional)
directions
Combine all of the ingredients in a large serving bowl. Toss with the dressing before serving, if using.
tip: This salad is also fantastic with Cucumber Sauce (here) as the dressing.
