Total time: 35 minutes
Ingredients :
• 4 eggs
• 1 ripe banana
• ¾ cup coconut milk
• ¾ cup almond flour
• 1 pinch of salt
• 1 tbsp. of ground psyllium husk powder
• ½ tsp. vanilla extract
• 1 tsp. baking powder
• 1 tsp. of ground cinnamon
• Butter or coconut oil for frying
Directions:
1. Mash the banana thoroughly until you get a mashed potato consistency.
2. Add all the other ingredients in and whisk thoroughly to evenly distribute the dry and wet ingredients. You should be able to get a pancake-like consistency
3. Fry the waffles in a pan or use a waffle maker.
4. You can serve it with hazelnut spread and fresh berries. Enjoy!
