    Poached Eggs with Tomatoes

    (Total Time: 15 MIN| Serves: 4)

    Ingredients:
    4 Eggs
    1 Tomato, chopped
    ½ Red Onion, diced
    ½ tsp Salt
    ¼ tsp Pepper
    ½ tsp Paprika
    ½ tsp dried Parsley

    Directions:

    1. Grease 4 ramekins with cooking spray.
    2. Beat the eggs along with the salt, pepper, paprika, and parsley.
    3. Stir in the tomatoes and red onion
    4. Divide this mixture between the ramekins.
    5. Pour 1 ½ cups water into your Instant Pot and lower the trivet.
    6. Place the ramekins inside and close the lid.
    7. Cook on STEAM for 5 minutes.
    8. Release the pressure quickly.
    9. Serve and enjoy!
