Ingredients
1 tbsp. coconut flour
⅓ cup almond flour
1 tbsp. beetroot powder
1 tbsp. unsweetened cocoa powder
¼ tsp. baking soda
3 tbsp. erythritol
¼ tsp. vanilla powder
¼ cup sour cream
2 eggs
2 tbsp. extra virgin coconut oil
For the Frosting:
2 tbsp. butter, room temperature
¼ cup cream cheese
1 tbsp. powdered erythritol
¼ tsp. vanilla powder
Directions
- In a bowl, mix the almond flour, coconut flour, cacao powder, beetroot powder, baking soda, erythritol and vanilla powder.
- Add the eggs, melted coconut oil and sour cream, and combine well.
- Place the mixture into two mugs. Microwave each of them on high for 70-90 seconds.
- Meanwhile, prepare the frosting by mixing the butter, erythritol, cream cheese and vanilla.
- Frost the finished mug cakes and enjoy.
