Ingredients:
1.5 cups pecans
4 tbsp. unsalted butter, melted
1/8 tsp. sea salt
1 tsp. powdered stevia
24 oz. cream cheese
1.5 tsp. pure vanilla extract
2 large eggs, beaten
1 cup heavy whipping cream
1 tsp. liquid stevia
3/4 cup fresh berries of choice
Preparation: Preheat the oven to 350°F (180°C). Place pecans in food processor and then combine the crushed pecans, butter, sea salt, and the stevia mix. Divide the mixture into a muffin pan with muffin paper cups. Bake for 5 minutes. In a separate bowl, beat the cream cheese, vanilla extract and the rest of the stevia. Add eggs and beat lightly. Add this creamy mixture over the baked muffin crusts and bake for another 25 minutes. Before serving, add the whipped cream, liquid stevia and the rest of the vanilla extract. Add this mixture on top with a few berries to serve.
Serving Suggestion: Instead of serving hot, you might consider leaving these muffins to chill overnight in the fridge and serve cold.
