The perfect sugar-free, low-carb St. Patty’s Day treat. Skip the high-carb, sugar-loaded version and go for this dairy-free keto shamrock shake instead.
INGREDIENTS
•½ medium avocado, peeled and pitted
•1 scoop dairy-free keto vanilla protein powder
•½ cup unsweetened coconut or almond milk
•8 ice cubes
•⅛ teaspoon pure peppermint extract
•5 drops natural green food coloring (optional)
•2 tablespoons Coconut Milk Whipped Cream (here), for garnish (optional)
•1 tablespoon sugar-free dark chocolate chips, for garnish (optional)
DIRECTIONS
1. Put the avocado, protein powder, coconut milk, ice, peppermint extract, and food coloring, if using, in a blender and pulse until blended and creamy.
2. Pour into a 12-ounce glass. Top with the whipped cream and chocolate chips, if desired.
tip: If using food coloring for this recipe, opt for a natural food coloring that is free of artificial dyes. You can also tint this drink green by using a little organic matcha powder or even chlorophyll. It is deep green in color and already has a fresh minty taste.
