Ingredients

• 1 large egg
• 1 Tbsp / 7g coconut flour
• 1 Tbsp / 7g grated parmesan cheese
• 1 Tbsp / 15ml milk or unsweetened almond milk
• 1/4 tsp baking powder
• 1/8 tsp baking soda
• 1 pinch salt
• 1/4 tsp mixed herbs, optional
• 1 tsp olive oil or butter, for frying

Instructions

1. In a small bowl, combine the egg, coconut flour, milk, baking powder, baking soda, salt, and optional mixed herbs. Whisk thoroughly until you have a smooth, lump-free batter.
2. Heat a little oil or butter in a small non-stick skillet over medium heat.
3. Pour half of the batter into the pan, forming two small, equally-sized circles.
4. Cook for 2-3 minutes, or until bubbles appear on the surface and the undersides are golden brown. Flip the flatbreads carefully.
5. Sprinkle half of the parmesan cheese over one of the flatbreads, then place the second flatbread on top to create a sandwich.
6. Continue to cook for another 1-2 minutes, pressing down gently, until the cheese is melted and the outside is golden.
7. Remove the sandwich from the pan and repeat the process with the remaining batter and cheese to make your second sandwich.
