Ingredients

• For the Omelet
• 1 cup / 30g fresh spinach, chopped
• 1 cup / 36g Swiss chard, chopped
• 3 large eggs
• 2 tbsp / 30ml olive oil
• For the Spices
• 1 tsp / 3g garlic powder
• ½ tsp / 3g sea salt
• ¼ tsp / 0.5g red pepper flakes

6. Pour the egg mixture directly into the hot Instant Pot insert. Use a spatula to spread the mixture into an even layer and let it cook undisturbed for 2-3 minutes, or until the edges are set.
7. Gently run a spatula around the edges of the omelet to loosen it. Carefully slide it onto a serving plate. Spoon the sautéed greens over one half of the omelet and fold the other half over.
