Chorizo Shakshuka

(Total Time: 25 MIN| Serves: 6)

Ingredients:
1 pound Ground Chorizo
6 Eggs
½ tbsp. Cumin
½ cup diced Onion
1 Red Bell Pepper, diced
28 ounces canned diced Tomatoes
1 tsp minced Garlic
1 tbsp. Coconut Oil
¼ tsp Pepper
½ tsp Salt
1 ½ cup Water

Directions:

  1. Set your IP to SAUTE and melt the coconut oil in it.
  2. Add the onions and peppers and sauté for 3 minutes.
  3. Add garlic and cook for 30 more seconds.
  4. Add the chorizo and cook until browned.
  5. Stir in the tomatoes and spices.
  6. Transfer the mixture to a baking dish.
  7. Pour the water into the IP and lower the rack.
  8. Crack the eggs into the baking dish and place it on the rack.
  9. Close the lid and cook on HIGH for 10 minutes.
  10. Do a quick pressure release.
  11. Serve and enjoy!
