Seafood Omelet

Servings: 4

Ingredients:

• 12 eggs
• 4 garlic cloves
• 1 cup mayonnaise
• 2 red chili peppers
• 10 oz. boiled shrimp or some seafood mix
• 4 tbsp. olive oil
• fennel seeds
• chives
• cumin
• 4 tbs. olive oil/butter
• salt and pepper to your taste

Directions:

1. Preheat your broiler Mix your seafood with olive oil, chili, cumin, minced garlic, salt, pepper, and fennel seeds. Then set it aside and cool to room temperature.
2. Add the chives (optional) and mayo to the cooled mixture. Whisk the eggs together, season them, and fry them in a skillet.
3. Add the mixture. When your omelet is almost ready, fold it, lower the temperature a bit, and let it set completely. Serve it immediately for the best taste.
