Ingredients

• What You’ll Need
• ¾ cup / 115g shredded zucchini
• ¼ cup / 40g golden flaxseed meal
• ¾ cup / 70g almond flour
• 2 tablespoons Swerve Sweetener, or other erythritol-based sweetener
• ½ tablespoon baking powder
• ¾ teaspoon cinnamon
• ¼ teaspoon ginger powder
• ¼ teaspoon salt
• 1 large egg, room temperature
• 1 large egg white, room temperature
• 2 tablespoons avocado oil
• 2 tablespoons water
• ¼ teaspoon unsweetened vanilla extract

Instructions

1. Directions
2. Place the shredded zucchini in a sieve, sprinkle with a pinch of salt, and let it sit for 1 hour to draw out excess moisture.
3. After an hour, use your hands or a cheesecloth to squeeze as much liquid as possible from the zucchini. This is the key to a crispy chaffle! Set the dry zucchini aside.
4. Preheat a non-stick waffle iron to a medium or medium-high setting.
5. In a large bowl, whisk together the almond flour, flaxseed meal, Swerve, baking powder, cinnamon, ginger, and salt.
6. Add the squeezed zucchini, egg, egg white, avocado oil, water, and vanilla extract to the dry . Beat with an electric mixer on low speed until the batter is just combined.
7. Pour one-fourth of the batter onto the hot waffle iron. Close the lid and cook for 5-7 minutes, or until the chaffle is golden brown, firm, and releases easily.
8. Carefully transfer the cooked chaffle to a wire rack to cool and crisp up. Repeat with the remaining batter to make 4 mini chaffles.
9. Serve immediately while warm and enjoy!

Pro Tips

• for Perfect Chaffles
• Don’t skip the squeeze! The most critical step for a non-soggy chaffle is to remove as much water as possible from the zucchini. A nut milk bag or cheesecloth works best for this.
• Let them rest on a wire rack for a few minutes after cooking. This allows steam to escape and helps the chaffles firm up and get perfectly crispy. Avoid stacking them while hot.
• These chaffles freeze beautifully. Allow them to cool completely, then store in a freezer-safe bag with parchment paper between each one. Reheat directly from frozen in a toaster or air fryer.
• For an even warmer flavor, add a pinch of nutmeg or allspice to the batter along with the other spices.

FAQ

Q: Why are my zucchini chaffles soggy
A: The most common reason for soggy chaffles is excess moisture in the zucchini. It is a critical step to squeeze as much liquid as possible from the shredded zucchini before adding it to the batter. This ensures your chaffles turn out firm and crispy.

Q: How do I store and reheat these chaffles
A: These chaffles freeze beautifully. Allow them to cool completely on a wire rack, then store them in a freezer-safe bag with parchment paper between each one. Reheat directly from frozen in a toaster or air fryer to restore their crispiness.

Q: Can I use a different sweetener
A: Yes, you can use another erythritol-based sweetener as a 1:1 substitute for Swerve. Be sure to check the conversion rates if you are using a different type of low-carb sweetener, such as monk fruit or stevia.

Q: What is the net carb count per chaffle
A: Each mini zucchini bread chaffle contains 3.6g of net carbs. This is calculated by subtracting the fiber (5.8g) from the total carbs (9.4g).
