Ingredients:
• 1 tbsp. mozzarella cheese (grated)
• 2 tbsp. cream cheese
• 1 chicken breast (boneless)
• 1 tbsp. onion (chopped)
• Oil as needed
• 1 tbsp. butter
• 1/2 cup spinach (chopped)
• Salt to taste
• Pepper to taste
Directions:
1. Place a pan over medium-high heat and add butter. Add onions and spinach, allow to cook for two minutes or until cooked thoroughly. Add in the cream cheese to the pan, mix well to combine. Allow simmering for two minutes.
2. Lay the chicken flat on your cutting board. Use a sharp knife to deep cut a pocket through chicken breast. Flavor both sides of chicken with salt and pepper. Spoon the shredded cheese and spinach mixture into the pocket.
3. Fold and seal the chicken breast with toothpicks. Place a skillet over medium-high heat and add olive oil. Cover the pan with a lid and cook the chicken for 8 minutes or until golden. Cut through the middle and serve hot.
