Scrambled Eggs with Buttered Basil

Ingredients:

• 2 ounces butter
• 4 eggs
• 4 tbsp. coconut cream or coconut milk or sour cream
• 4 tbsp. fresh basil
• Salt to taste

Directions:

1. Situate non-stick pan on low heat and melt butter.
2. In a small bowl, whisk eggs, coconut cream, basil and salt.
3. Pour into hot pan. With a spatula, stir eggs until scrambled and cooked to desired doneness.
4. Serve warm, or place in meal prep container to save for later.
