Ingredients

• 2 cups / 300g cooked corned beef, chopped
• 4 large eggs
• 1 small yellow onion, diced
• 1 lb / 450g parsnips, peeled and diced
• 2 cloves garlic, minced
• ½ cup / 120ml beef or chicken broth
• 2 tbsp / 30ml olive oil
• Sea salt and freshly ground black pepper to taste
